摘要: 养殖业中因滥用和误用抗生素治疗疾病及促进动物生长,导致抗生素在动物组织中积累,并通过食物链进入人体,对人类健康构成威胁。因此,本研究旨在综述食品中抗生素残留的现状及抗生素的替代产品,以期为改善抗生素残留状况提供有效解决方案。利用数据同化方法,以“抗生素残留”“食品”等关键词作为数据来源进行分析。对食品和水环境中的抗生素残留问题进行了全面探讨。研究发现,发达国家和发展中国家均存在抗生素残留现象,尤其是在发展中国家,由于缺乏相关规范和公众认知,抗生素残留问题显得尤为严重。同时,总结了一些能够替代抗生素的方法,旨在为解决抗生素残留问题提供更多选择和可能方案。建议在养殖场中使用生物活性成分作为抗生素的替代方案,以减少抗生素的使用,降低动物及食品中的抗生素残留水平,从而保护人类健康和环境安全。
