摘要: 植物蛋白作为可持续的优质蛋白质来源,在食品、医药、保健品、化妆品及碳中和战略等领域具有重要 价值。本文综述了近年来植物蛋白提取方法、功能特性及改性方法、应用领域的最新研究进展,重,点提出了应对 当前挑战的新方案。提出了新型蛋白植物本土资源的开发与利用、人工智能导向下的多技术协同捉取体系、植物 蛋白加工技术的改进和多学科交叉等研究方向。本文旨在为植物蛋白产业的可持续、高质量发展提供理论支撑, 顺应健康与绿色的时代发展需求。为实现植物蛋白产业的开发与应用提供了新的视角与实践路径。
